Salted Caramel Walnut Loaf

Who doesn't love walnuts? They are so incredibly tasty and pack a powerful nutritional punch. Walnuts are rich in nutrients that are able to help protect the brain from damaging inflammation and support good brain function as we age. They are also a great source of omega-3s and nourish the beneficial bacteria in our gut - how amazing right?So it's no surprise that the star of this recipe is the humble walnut and trust me when I say that you are going to absolute love it!Here's What You'll Need:Wet Loaf Ingredients:

  • 3 Eggs

  • 1 tbsp Coconut Oil

  • 10 Medjool Dates (pitted)

  • 1/4 Water

Dry Loaf Ingredients:

  • 2 cups Wholemeal Spelt Flour

  • 2 tsp Baking Powder

  • 1/2 Crushed Walnuts (additional handful to

  • Pinch of Salt

  • 1/2 tsp Cinnamon

Salted Caramel Layer Ingredients:

  • 12 Medjool Dates (pitted)

  • 1 tbsp Coconut Oil

  • 3 cups Water

  • Pinch of Salt

Creating The Magic: In a food processor, on a low speed, blend and combine the wet loaf ingredients until smooth. In a large mixing bowl, combine the dry loaf ingredients and then add in the wet loaf ingredients. Be sure to stir well until all ingredients become well combined and sticky. Once all mixed together, place the loaf mixture into a small loaf tin and bake for 25-30mins at 170º fan forced.While the loaf is baking, you may get started on the caramel layer. Add the medjool dates and coconut oil into a food processor and blitz on a low speed adding the water slowly, cup by cup until you've achieved a smooth, relatively thick caramel sauce consistency.Once the loaf has been baked, allow to sit for 10-15 minutes and then spread the caramel sauce over the top. I also like to sprinkle a handful of walnuts on top and serve with a coffee.
