Power Packed Pasta
This super tasty and incredibly nutritious pasta dish is sure to be a regular week night meal addition with plenty left over for lunch the next day too.
Serves 4What You'll Need:
500g Turkey Mince
500g Buckwheat Spiral Pasta
1 Large Onion
2 Cloves of Garlic
Pinch of Salt
Choice of Garnish (Oregano, Parsley, Basil and/or Parmesan etc.)
Creating The Magic:Start by cooking the pasta, following the directions on the packet (buckwheat pasta does not require much cooking time, overcooking will result in soggy pasta). Don't forget to add a pinch of salt to the pot. In a food processor (this is my lazy girl tip), blitz the garlic, carrot and onion until fine and well combined. In a medium heated pan, drizzle in some olive oil, add in the garlic, carrot and onion and toss in the pan for 1-2 minutes. Next, add the turkey mince into the pan and stir until the turkey mince starts to turn from pink to grey. Once the turkey mince has changed colour, add in the passata, a pinch of salt and reduce the heat to let simmer for 2-3 minutes. Now comes the fun part, serving this delicious dish up. Once the pasta has been drained and the pasta sauce mixture has been cooked, it is time to plate up. I like to add some fresh herbs and shaved parmesan on top. Enjoy!
