Dairy and Gluten Free Pancakes
If you are like me, you love a lazy Sunday morning. One that starts off slow, relaxed, care free and one that includes PANCAKES!However, the prepackaged mixtures and most of the recipes on the internet are not healthy, contain a sh*t-load of sugar, gluten and dairy which means many people with intolerances and the health conscious feel that they have to miss out.Well, my friend, I am going to share with you my supersimple pancake recipe that won't bloat you or leave you feeling guilty.Pssst, it is also boyfriend and kid approved. Preparation Time: 5mins | Cooking Time: 10mins | Serves: 2 PeopleIngredients:2 Eggs2 BananasPinch of Cinnamon1 tsp Coconut OilCreating the Magic:Peel the bananas and mash in a bowl until no lumps.Crack the eggs and whisk in with the bananas until combined.Heat coconut oil in a fry pan on medium to low heat and cook both sides for about 2 minutes each.I like to use a 1/2 cup measuring cup to evenly portion out my pancakes (this gives me three good sized pancakes per person).Once cooked, I like to put a handful of blueberries on top and drizzle some pure maple syrup also.Get as creative as you like with toppings, the choice is yours.
