Banana Bread


This banana bread recipe is a winter warmer that is sure to please and feed the whole family. Bananas are packed full of long lasting energy making this banana bread the perfect snack in between meals to keep you feeling full whilst satisfying your sweet tooth. What a win-win!Here’s what you’ll need:

  • 2 Cups Wholemeal Spelt Flour

  • 3/4 Teaspoon Baking Soda

  • 1/4 Cup Wholemeal Self Raising Flour

  • Pinch Of Salt

  • 1/3 Teaspoon Cinnamon

  • 1/4 Cup Coconut Sugar

  • 4 Medium Bananas

  • 2 Large Eggs

  • 1/3 Cup Low-Fat Greek Yoghurt (Chobani Greek Yoghurt Is An Absolute Favourite Of Mine)

  • 1 Teaspoon Vanilla Extract

Creating The Magic:Place all of the dry ingredients into a bowl and combine.Mash the bananas, add in the eggs, yoghurt and vanilla extract and stir together.Add the wet mixture to the dry mixture and stir well until you are left with a ‘gluggy’ consistency.Place the mixture into a lined loaf tin and bake for 40-50 minutes at 180°.I love to serve up a slice with a drizzle of honey and an extra sprinkle of cinnamon. Mmmm DELISH!
