So, I am beginning to see a trend in the recipes I am posting and are yet to post… they all have peanut butter and chocolate in them. To say I am obsessed would be an understatement.
My partner Angus, loves his coffee and likes a cookie (or several) to go with it so I set myself a challenge to make not only a healthy recipe but also a tasty one (and I think I have succeeded).
This recipe is dairy free, refined sugar free, vegan and super addictive!
Packed full with all of the macronutrients, protein, good fats, and carbohydrates, these cookies are the perfect in-between-meals snack.
Preparation Time: 10mins | Cooking Time: 25mins | Makes: 18-20
2 cup Oats
1/3 cup Peanut Butter
1/2 tsp Baking Soda
1/8 cup Coconut Sugar
1 tbsp Pure Maple Syrup
Pinch of Salt
Creating the Magic:
Soak dates in boiling water for 5 minutes until nice and soft. Add oats, dates (drained), peanut butter, baking soda, coconut sugar, maple syrup and salt into a food processor and blend until you have a achieved a clumpy, sticky consistency. If the mixture is too dry, add some of the water that was used to soak the dates until desired consistency is achieved.
Once mixture is well combined, roll into small balls and then press down into a cookie shape onto a lined baking tray.
Bake cookies for 25-30 minutes, until edges become nice and crispy.
Let sit for 10-15 minutes and enjoy!
